Black Bean Soup

Step1 of 6: Olive Oil, Celery, Red Onion, Garlic, Carrot
In a soup pot, stir fry celery, onion, garlic, carrot until fragrant.
Step2 of 6: Dried Thyme, Bay Leaf, Red Capsicum, Green Capsicum, Black Bean (in can)
Add in thyme, bay leaves, chili and capsicum. Stir well. Add in black bean and stir for a while.
Step3 of 6: Water, MAGGI® Chicken Stock Cube
Pour in water and add in MAGGI Chicken Cube. Reduce heat and simmer for 30 minutes or until thick.
Step4 of 6: Egg
Crack egg in the soup and reduce heat. Poach egg in the soup for 5 minutes.
Step5 of 6: Coriander Leaves, Bird's Eye Chilli, Tomato, Lime Juice
While poaching, prepare salsa by adding in coriander, bird eye chili, tomato and lime juice into a bowl. Mix well and set aside.

Serve the soup with salsa and warm bread.
