Eat your blues away with this nasi kerabu recipe! A light blue rice dish accompanied with a variety of herbs and side dishes, the nasi kerabu is vibrant in colours and captivating in flavours. This dish is a traditional fare that originates from the state of Kelantan and Terengganu. Nasi kerabu is a Malay phrase, where ‘nasi’ means rice and ‘kerabu’ is a sweet and savoury raw Thai-style vegetable salad. The dish encapsulates Malaysia’s Northeastern coastal areas dotted with quaint fishing villages perfectly — by incorporating local seafood catches together with dishes of heavy Thai influence like herbs and salad.

A typical nasi kerabu recipe usually calls for blue-coloured rice (coloured with blue flower extract), fish, chicken, salted egg, vegetables, fish crackers and most importantly — the budu condiment made of fish sauce and fish flakes on top. Here’s a nasi kerabu recipe for you to try at home! Before you begin cooking the rice, shred the leafy herbs finely with a sharp knife. Next, prepare the rice by adding blue colouring or bunga telang (butterfly-pea flower) extract, kaffir lime leaves, lemongrass, MAGGI® CukupRasa™ into the rice cooker. Pour in the water and allow the rice to cook. When it is cooked, serve it with all your preferred side dishes and savour your nasi kerabu dish!
