This dish is a traditional fare that originates from the state of Kelantan and Terengganu. Nasi kerabu is a Malay phrase, where ‘nasi’ means rice and ‘kerabu’ is a sweet and savoury raw Thai-style vegetable salad. The dish encapsulates Malaysia’s Northeastern coastal areas dotted with quaint fishing villages perfectly — by incorporating local seafood catches together with dishes of heavy Thai influence like herbs and salad. A typical nasi kerabu recipe usually calls for blue-coloured rice (coloured with blue flower extract), fish, chicken, salted egg, vegetables, fish crackers and most importantly — the budu condiment made of fish sauce and fish flakes on top.
