What lies behind the appeal of salted egg yolk? Salted eggs are pantry staples in most Malaysian households, evident in traditional dishes like telur asin pedas and salted egg porridge. Malaysians have a knack for creamy and savoury food, and is evident across our food culture: the usage of coconut milk in curries, ghee butter in traditional sweets and many more. One of the most common salted egg dishes has got to be the salted egg chicken, ideal as a side dish or a savoury snack — here’s a recipe so you can make this dish at home! Firstly, cut the chicken into bite size pieces and mix it with MAGGI® CukupRasa™. Next, mix flour and corn flour in a bowl and beat the egg in a separate bowl, heat some oil at the same time. Coat the chicken in flour, then dip them in the egg mixture and dip it back in flour again. The egg mixture will help to absorb the flour better, which then fries up to form a crunchy crust. Deep fry the chicken until golden brown. Then, prepare the golden salted egg chicken sauce. Heat the pan and add in butter, garlic, curry leaves and chilli, then stir fry until fragrant. Pour in salted egg yolk, evaporated milk, water and MAGGI® CukupRasa™ for a thick, creamy golden salted egg yolk sauce. As the salted egg chicken sauce comes to a boil, mix in the chicken and make sure every piece of it is drenched in the rich creamy sauce.
