To Malaysians, a meal or a dish without sambal paste is incomplete — sambal is a condiment that adds layers of complex flavours to our everyday ingredients. Sambal is a notably versatile and robust component in traditional Malaysian cooking, as this bright red paste adds vibrancy to a simple ingredient with its zesty and tantalizing notes. It’s the essential component of many scrumptious and flavourful local dishes, matching well with a wide array of ingredients from vegetables to eggs. Sambal eggs is a common dish enjoyed by many, particularly in Indonesia and Malaysia. The eggs can be boiled, scrambled or fried — cooked in thick, fiery sambal condiment that goes so well with rice dishes.

Try out this simple scrambled eggs sambal recipe that’ll whet anyone’s appetite for your next meal! Firstly, blend dried chillies, red onion, garlic, ginger, water and cooking oil together. Next, heat up some oil and stir fry shallots till fragrant. Then, add in the blended ingredients and stir fry till dry. Add in another 2 tablespoons of oil, stir fry further till oil separates. After that, add in tamarind, water, MAGGI® CukupRasa™ and sugar to create the flavour base. Cook the mixture evenly over medium heat. Now, it’s time to cook the eggs — crack the eggs one at a time into the sambal, making a hole for each egg. Cook the eggs halfway and mix evenly, a tasty scrambled eggs sambal dish is ready to be served! Garnish the scrambled eggs with long slices of spring onions or coriander.
