Fried macaroni is an everyday staple at local night markets and food stalls. A typical fried macaroni dish is usually stir-fried with tomato ketchup, chilli sauces, vegetable and meat pieces; some might add sambal paste for an extra flavour kick.

Far from bland and tasteless, a fried macaroni dish has a tangy texture and a charred fragrance, all without the greasy creaminess from cheesy sauces. If you’re not a huge fan of cheese and cream, stir-fried macaroni is definitely a tasty choice!

The key to a good stir-fried macaroni dish is to retain its tangy texture, as overcooking it leads to mushy and soggy noodles that break apart easily. This happens when the pasta is boiled to cook fully first before stir-frying it with the condiments, causing it to overcook. Let it cook for half its time, then strain and set aside. Next, heat up a pan, add some oil, then sauté some onion, garlic, and dried chilli paste until fragrant. Then, add in your preferred choice of meat and allow it to cook thoroughly. When the meat is cooked, add in the macaroni and vegetables.
