Known as ‘gon chow ngau ho’ in Cantonese, you can find it in various Chinese restaurants. When making beef fried noodles, the ‘wok hei’ (wok’s breath) is the essential component of a dish to make it tasty, charred and fragrant. The intense heat and quick-stirring from the wok impart a complex aroma and charred flavour to the dish — a classic cooking technique in Chinese cuisine highly regarded by many chefs, home cooks and patrons. Here’s a simple beef fried noodles recipe with a local twist for you to try at home!

Firstly, blend some shallots, corn oil, garlic and chilli paste together, then stir fry the blended ingredients until the oil separates. Add in some beef and cook briefly.
