Cloves, spices and everything nice makes up a plate of tasty ghee rice! A fragrant dish cooked with ghee butter that goes well with meat curries and vegetables, ghee rice is a dish synonymous with Indian cuisine. Ghee is a glistening gold butter with a rich texture and a nutty taste that is commonly used in Indian cuisine for high-heat cooking methods. It is a type of clarified butter that is heated until the milk solid separates and the water evaporates, extending its shelf life under the tropical climate of India.
Without the milk solid, ghee is suitable to be consumed by vegetarians and lactose intolerant people, so here’s a tasty ghee rice recipe for you to try at home! Start off by preparing the rice — rinse and drain it well. Heat up the ghee on low heat in a wok. Then, add in red onions, garlic, ginger, cinnamon sticks, star anise, cloves, and cardamom and sauté until fragrant. After that, add in the drained rice and stir to make sure each grain of rice is coated evenly. Once it’s all mixed well, transfer it to the electric rice cooker and add some MAGGI® Chicken Stock Cube and water. For extra fragrance, cook the rice with pandan leaves tied in knots. Once it’s cooked, top it with the raisins and roasted cashew nuts to give the rice some extra flavour and crunch to perfect your ghee rice recipe!
