Kerabu Glass Noodle is a Thai dish that is gaining popularity for its blend of spicy and sour flavors. This dish is rich in flavor but simple to make. It is made with aromatic herbs like lemongrass and ginger flower mix together with prawns and cuttlefish. Yes, most of the process of preparing this dish involves a lot of mixing!
Step one of making the kerabu glass noodle is to prepare the glass noodles. Soak the noodles in water until it soften, then blanch until cooked and set it aside. Next, blanch cleaned prawns and cuttlefish and set them aside as well. You will also need to prep the veggies and herbs. Slice carrots, cherry tomatoes, long beans, kantan flower, lemongrass, kaffir lime leaves and bird’s eye chili. Then, mash 3 red onions, 6 bird’s eye chili, 5 clove of garlic and coriander root until it is smooth. Now the mixing begins. In a mixing bowl add the mashed ingredients with fish sauce, lime juice, a tablespoon of MAGGI® CukupRasa and 2 tablespoon of sugar. Mix it all together. Next, add in the glass noodles, prawns and cuttlefish and mix them well. Lastly, mix in the remaining ingredients which are carrots, tomatoes, long beans, kantan flower, lemongrass, kaffir lime leaves and bird’s eye chili.
