Fajitas are a popular Tex-Mex dish made from marinated and grilled skirt steak served in wheat tortillas. The name of the dish is derived from the Spanish term “faja”, which means “strips” or “girdles” that describes the cheap cut of a beef — a thin layering of muscle that covers the diaphragm of a cow. Back in the 40s, workers at the ranch were given the least desirable parts of a cow — the head, intestines and “faja”. They would tenderize the meat by pounding and marinating it in lime juice. After that, the meat is cooked over an open fire and served with a variety of condiments rolled in a flour tortilla.
Since then, the fajitas are enjoyed globally and have evolved to suit our modern palate. These days, fajitas contain more expensive ingredients like the boneless sirloin or beef steak, paired with cilantro, onions, tomatoes, chilies and also sour cream and cheese. Place chicken, mashed avocado and cheese on top, roll up and repeat the process for the remaining tortillas.
