Grind onion, garlic, ginger, cili padi and galangal with some water.
Heat the oil, fry the knocked lemongrass and grinded ingredients until fragrant and oil has separated.
Add the chicken and tamarind slice and mix well. Pour in the water and simmer until slightly thicken.
Sprinkle MAGGI CukupRasa and sugar. Mix well. Cook until chicken is fully cooked.
